Sticky Toffee Pudding

Served warm with a scoop of vanilla ice cream, this is perhaps the most comforting dessert in existence.

Sticky Toffee Pudding

Ingredients

  • 1 cup dates (pitted and chopped), 1 cup boiling water, 1 tsp baking soda
  • 1/3 cup butter, 3/4 cup sugar, 2 eggs, 1 1/3 cups flour
  • Sauce: 1/2 cup butter, 1/2 cup brown sugar, 1/2 cup heavy cream.

Instructions

  1. Soak dates and baking soda in boiling water.
  2. Cream butter and sugar. Add eggs. Fold in flour and date mixture.
  3. Bake in a square pan at 350°F for 35 mins.
  4. Simmer sauce ingredients for 5 mins. Pour over warm cake.
