Why Oven Temperature Matters
Most ovens cycle on and off to maintain temperature, meaning they swing by 20-30 degrees. Furthermore, the dial might say 350°F, but the actual internal temperature could be 325°F or 375°F.
The Consequence:
Too hot: Burnt edges, raw center, peaked tops.
Too cold: Pale crusts, dense texture, sunken centers.
The Fix: Buy a $7 oven thermometer. Place it in the center of the rack. Adjust your dial until the thermometer reads the correct temperature. It's that simple.
