Slow Cooker Beef Stew

A hearty, warming stew that cooks itself while you enjoy your snow day.

Beef Stew

Ingredients

  • 2 lbs beef chuck roast, cubed
  • 4 carrots, 3 potatoes, 1 onion, chopped
  • 4 cups beef broth, 1 tbsp Worcestershire sauce
  • Thyme, rosemary, bay leaf.

Instructions

  1. Season beef with salt and pepper. Brown in a skillet for best flavor.
  2. Add beef and veggies to slow cooker.
  3. Pour in broth and seasonings.
  4. Cover and cook on Low for 7-8 hours or High for 4 hours.
  5. Thicken gravy with a cornstarch slurry if needed before serving.
